Executive Chef Tummanoon Punchun graduated from the European Food Program of the Hotel & Tourism Training College in Chonburi, where he developed an appreciation for European cuisine.
He quickly moved up the culinary ranks by developing his skills at a variety of hotels and resorts including the Bangsan Beach Resort and the Siam Lodge Hotel in Chonburi.
In the early 1990s he travelled to Malaysia promoting and demonstrating Thai cuisine. In 1994 Chef Tummanoon became the Executive Chef at the Boathouse in Phuket and started the Boathouse Culinary School, which established itself as one of the most popular Thai cooking school in the country. Between 1995-1997 he was invited to Switzerland to hold Thai cooking class and food promotions with the Swiss Chefs Association.
Having received great accolade both in Thailand and abroad, chef Tummanoon is widely regarded as one of the most prominent Thai Chefs in the world.
Working in Chiang Mai, has offered him the opportunity to experiment with different flavours and textures involves many more herbs, vegetables and fruit, in comparison to Phuket, where meals are very seafood-based.
